This is my kind of meal! (In fact, it was my meal tonight )
Meredith’s homemade bean burger:
In a bowl, mash about 1/3 cup of no salt added beans (I used cannellini ) with a fork. Add 1/4 c rolled oats, 1 clove of garlic (minced), 1/2 of a small onion (diced), 1 TBSP ketchup, 1 TBSP mustard, chili powder and cumin to taste. Form into a patty and heat in a skillet over medium heat with a little EVOO for about 2.5 minutes each side.
Serve on toasted whole wheat bread with spinach, tomato, pickles, and your desired condiments.
Add a side of baked sweet potato fries for a meal that is 100x better than what’s in picture #1!

I found the veggie toys by googling “natural veggie toys!” I had in mind what I was looing for, and they actually exist! I found them for a little cheaper on Amazon.com.
