A lot of you asked my recipe for the tofu/bean burger I made yesterday. Basically I followed my usual bean burger recipe but instead of using 1/3 cup beans, I used about 1/4 cup beans and 1/4 cup tofu. Press the tofu first to get some of the moisture out. You should also use a bit more oatmeal because otherwise it will fall apart in the skillet (like mine started to do!).
It was definitely really tasty. I think it would be fun to add some veggies to it too . . . maybe mushrooms? Grated carrots? Peppers? Corn? So many possibilities!
Today was another long Wednesday. Only 2 more to go this semester!
Breakfast this AM was a simple but delicious oatmeal combo.

- a venti hot tea with cold soy (I swear, I only asked for a grande!)
I took 33 minutes out of my school day to fit in some stationary biking + Julie & Julia reading at the gym. I LOVE this book! I never had the chance to see the movie, but Julie is just too funny. People were looking at me strangely due to my LOL-ing.
I had an exam due at 5:00 today, and I’m so glad that’s done with! Now that it’s turned in, I can’t worry about my answers anymore.
For dinner I had another simple skillet meal.
broccoli, mushrooms, leftover black bean/tofu burger mixture, less Na soy sauce, lemon juice, cumin, turmeric, nutritional yeast
Excellent! How I love nutritional yeast!
For those of you in school, have you registered for next semester yet?
I always love planning out a new schedule! It’s going to be another busy one for me, but I’m already feeling excited for it.
Time to get into my jammies and get ready for SVU!
