I think the easiest way to get more servings out of a dish is by bulking it up with veggies.
For example, my mac & cheeze SUPPOSEDLY only contained 2 servings.
Not true, my friends! Here we are on day 3:
mac & chreese + broccoli, mushrooms, and tomato
