It’s certainly not when you’re making sloppy lentils! But more on that later :)

This morning started off with a trip to Starbucks with my dearest laptop because I had some work to accomplish! It’s almost as if I never left grad school, right?

I’ll take an iced tall sugar-free vanilla soy iced coffee with my case study, thank you very much!

After a productive morning I came home for lunch, some light reading, and later a snack I’ve been eyeing all over blog world . . .

I was so happy to get my hands on the new peanut butter chocolate chip Larabar! PB and chocolate are definitely two of my favorite flavors, and together they are a winning combo for this larabar. I love the simple ingredient list too: dates, peanuts, chocolate chips, and salt. I’m so glad that Publix had these!

After an afternoon that didn’t involve too much movement, I was getting super antsy so I decided to head out for a power walk.

Gotta double knot those laces!

Even though it was already 4:30 and I was walking by the water, it was still H-O-T out there! After 35-minutes all I could think about was water as I made my way back to the condo super sweaty and gross! Don’t worry, I took a long shower after I downed several glasses of the H2O.

And now, back to the sloppy!

Sloppy Lentils

I’ve been craving sloppy lentils for a while now and found  this fabulous recipe on Isa Chandra Moskowitz (the author of Vegan with a Vengeance, Veganomicon, etc)’s website. It does not disappoint. All I can say is: Make this now!!! :)

Ingredients

1 c uncooked lentils

4 cups water

1 TBSP olive oil

1 medium yellow onion, diced

1 green pepper, diced

2 cloves garlic, minced

3 TBSP chili powder

2 tsp oregano

1 tsp salt

8 oz can tomato sauce

1/4 c tomato paste

3 TBSP maple syrup

1 TBSP wet yellow mustard

4-6 kaiser rolls

Directions

Put the lentils in a small sauce pot and pour in 4 cups water. Cover and bring to a boil. Once boiling, lower heat and simmer for about 20 minutes, until lentils are soft. Drain and set aside.

About 10 minutes before the lentils are done boiling, preheat a medium soup pot over medium heat. Saute the onion and pepper in the oil for about 7 minutes, until softened. Add the garlic and saute a minute more.

Add the cooked lentils, the chili powder, oregano and salt and mix. Add the tomato sauce and tomato paste. Cook for about 10 minutes. Add the maple syrup and mustard and heat through.

Turn the heat off and let sit for about 10 minutes, so that the flavors can meld, or go ahead and eat immediately if you can’t wait.

Not only is this recipe absolutely delicious, it is also a great alternative to regular sloppy joes for those who are watching their cholesterol and saturated fat intake! Like I said, you definitely want to make these!

Signs of a good day

I knew it was going to be a good day as soon as I woke up on Friday.

First of all, it was FRIDAY! I think we can all agree that this is probably the best day of the week :)

Then, as soon as I headed out the door for work I was greeted with this sight:

Gorgeous! After a week of rain, seeing this rainbow was a welcome vision indeed!

We spent the morning learning about the MOVE program (Motivating Overweight/Obese Veterans Everywhere) as well as the needs of our geriatric vets. All of this while enjoying homemade blueberry muffins, OJ, and coffee courtesy of the RDs!

Lunch came via someplace I have loved and missed . . . Panera!

I got the You Pick Two special: half of a Mediterranean Veggie sandwich and the Greek salad (both sans feta), plus an apple on the side. Delish!

We spent the afternoon visiting patients and working on our case studies. A small soy half-the-syrup chai tea latte made for a lovely afternoon snack as I sat typing away at the computer.

After a quick nap and dinner at home, I headed over to Shabbat service . . . last week I just didn’t have the energy to get off the couch, but a nap made all the difference last night!

Today has been spent swimming, spying on dolphins from my balcony, cleaning, laundry, grocery shopping, and of course taking care of internship stuff! What a great start to the weekend, right?

Exhausted but happy

By the time I get home from my internship each day, I am completely wiped out! But that doesn’t mean I’m not loving every minute of it.

Here’s what a typical day looks like for me:

6:30 AM: alarm goes off and I roll out of bed. Quickly decide on what to wear, put on a pot of coffee, and sit down to breakfast. Usually breakfast is either a high fiber/high protein cereal (I love Kashi!) with almond milk and a banana OR a ww bagel with peanut butter and fruit.

7:00 AM: brush my teeth, pack my lunch bag, pour my coffee into my travel mug and head out the door at 7:15!

7:45 AM: arrive at the VA and make my way to the intern office to check my email and finish up any notes from the day before.

8 AM – 12 PM: class time! Today we reviewed tube feedings and CHO counting.

12PM-12:30 PM: lunch

12:30 PM – 1:15 PM: go to the Main hospital. Print out screenings forms for the patients we plan to see that day and review their charts.

1:15 PM – 3 PM: visit patients and work on assessments for their charts.

3 PM – 4 PM: work on assigned case study

4 PM – 4:30 PM: head back to the intern office to check emails and finish things up for the day before heading home

5: 15 PM: time to power walk!

6:00 PM – 10:00 PM : shower, cook dinner, check email/blogs, and work on more internship assignments (usually with Lifetime on in the background)

10PM: Ok, I’m actually lucky if I can make it up to this point! Last night I was in bed at 9, believe it or not!

Of course, next week it’s all going to change since we’ll only have class Monday and I’ll actually be in my first rotation, but I still thought you might be interested just to see what “a day in the life” looks like currently :)

Week 2

The second week of my internship began today! I could barely sleep last night because I was so excited knowing that I would be seeing my first patient today!

First I had to get through a morning of class where we learned how to determine a patient’s nutritional status (normal, mildly malnourished, moderately, or severely). It’s important to know their status for a lot of reasons, but one is that it determines how often you will be following up with them.

We also did an electronic medical record scavenger hunt, which was really handy because it’s a little hard to navigate at first!

Lunchtime was spent at a lecture on our patient’s spiritual quality of life, since this is often an especially huge issue with veterans. Then it was off to practice my patient interview skills with the cutest patient ever! I was nervous before I went into the room, but she was so sweet and adorable that I quickly calmed down.

DI Potluck

This weekend fellow interns Sara and Anna hosted the first dietetic intern potluck, something we’re planning on doing regularly throughout the year. I chose a recipe from Vegan with a Vengeance: mango ginger tofu.

I was kind of nervous about how this recipe would turn out, but Isa Chandra Moscowitz has never let me down! I shouldn’t have doubted her for an instant –

AMAZING!

Even Sara, who said she’s not usually a big fan of tofu, enjoyed it! The spicy flavor of ginger plus the sweetness of the mango really complimented each other.

Other yumminess included pita with hummus, a really great lentil soup, potato wedge “fries”, broccoli, watermelon, and a cherry red popsicle for dessert. :)

I can’t believe it’s already Friday! One week of my internship down, 41 to go :)

Wednesday was the last day of the general VA orientation so the past two days have been all dietetics! It’s been really interesting to learn about what we’re going to be doing for the next ten months. Plus we’re all feeling super professional now that we have our lab coats, ID badges, and pagers! (Not that we know how to work our pagers yet, but still!).

Broccoli Potato Soup

My sister gave me a fantastic idea for using the leftover stalks of broccoli: turn it into soup! I didn’t really have a recipe to go from, but this actually turned out really well :)

Ingredients:

3 lbs red potatoes, cut into quarters

1 c broccoli stalks, chopped

5-6 c veg broth

3/4 of a red onion, diced

2 bay leaves

salt and pepper to taste

Directions

Place quartered potatoes in a large pot and cover with vegetable broth. Cover and bring to a boil. Once boiling, add the remaining ingredients and reduce heat to simmer. Stir occasionally for about 45 minutes or until desired consistency is reached. If you get impatient like I did, you may want to bring a potato masher into the pot to speed things along!

Serve with a protein-topped salad and some good crusty bread on the side.

DI Recap!

I’m sure you all have been eagerly waiting to hear about the first day of my internship!

After this photo was taken, I hopped in my little blue Yaris and drove to the VA, very excited to start my time as a dietetic intern.

The first 3 days this week are spent doing the general hospital orientation, which is a little bit boring because a lot of the information (such as various employee benefits) unfortunately does not apply to the interns! Still, some of the info was definitely useful and we had plenty of breaks to step outside into the warm Florida sun and chat with each other.

I actually had met all of the interns over the previous week except for one, and everyone is super nice and we seem to get along really well. There are seven of us girls and one guy, and as one of the girls said: even though we come from all over the country,  we are all a lot alike (hello type A personalities!).

The dietitians actually provided us with lunch yesterday (so sweet) along with books we’ll need for the next 10 months . . . and then after our long day, they offered to take us to dinner and a baseball game!

It was $5 burger night at the Green Iguana, and the vegetarians among us were treated to a special improvised burger just for us.

Lots of sauteed veggies to fill up our buns, plus the usual lettuce, tomato, onion, and pickles. We also shared a basket of fries — you know, the crinkly ones? So good!

Then we headed to the stadium to cheer on our new home team, the Tampa Bay Rays.

We kept hearing references being made to cowbells, and we soon found out why.

Apparently you ring them not only to cheer on the home team, but also to distract the opponent. The dietitian who accompanied us passed around tootsie pops for us to snack on during the game — you gotta laugh, a bunch of dietitians spending the night eating burgers, fries, and candy!

We didn’t stay in our seats forever though, because we soon learned that there is a tank of sting rays at the stadium whom you can actually pet! We went off to investigate.

Unfortunately we couldn’t get too close because the stingrays were on break, but we still enjoyed watching them.

At 10:00 we were tied 4-4 with yet another inning to go . . . we were all pretty tired from our long day though and had the drive home ahead of us, so we missed the end of the game but I’m happy to say we won!

I’m still super exhausted after not a lot of sleep last night and a long day at the VA today, so I’m going to sign off for now!
